Abstract:
The spreading and cooling operation of traditional baijiu brewing process requires manual operation or the stubble-chopping machine for stirring the fermented grains, and there are many problems such as large amount of labor, uneven flipping and slow cooling, etc., which would affect the work efficiency and accuracy of process. Based on the above problems, design scheme of a spreading and cooling device for the fermented grains in brewing workshop is analyzed and discussed in this article. The device mainly comprises frame body and dispersing unit; among them, the corresponding position of the frame body is provided with baffle plate, centrifugal fan, control panel, driving unit, material temperature sensor, room temperature sensor, and other components. The device can adjust the position of the device through controlling the driving unit by the control panel so as to realize the effect of stirring, mixing and cooling of the fermented grains in different positions on the drying hall. The comparative analysis shows that the device has simple structure and reasonable design; it can realize the mixing of raw and auxiliary materials such as the cooked grains, Daqu powder and rice husks, etc., and the dispersing and spreading of fermented grains, which would reduce the labor intensity of cooling the cooked grains and improve the working efficiency in the brewing workshop.
